Cookie Dough Balls!
These make me want to do my happy dance, I love them so much. They are a bit calorically dense, but the thing I love about them is that they consist of all whole unprocessed foods! They are delicious and easy to make, which make them perfect for your kiddos, too.
1 TBSP melted coconut oil
1 TBSP honey
1 scoop chocolate protein powder (or vanilla would do)
1/2 cup oats
1/4 cup nut butter (peanut, almond, cashew, whatever)
1/4 cup semi-sweet chocolate chips
1 teaspoon vanilla extract
Tiny smidge of cold water to wetten the mixture.

May 17, 2011 at 7:34 amHave made them twice. Delicious! Just curious Jen…ever try something like stevia in place of the honey? I know the stevia I used to use said 1 packet had the equivalent sweetness of something like 2 tsp of sugar…but I'm not sure how that translates into honey.
Next time I may just try one packet and see how it is. Thanks for passing along the awesome recipe!
